A new recipe and baby Bella =)

I found this new fish recipe last week on my quest for healthier foods. I love it so much we have had it twice in 10 days! Good thing Ande liked it too. Or in his word "It's a keeper!" Here is the recipe:

Fish Baked with Lime

-2lb white fish fillets, such as bass, flounder or cod (I used cod)
-1 lime
-3tbsp EVOO
-1 large onion, finely chopped
-3 garlic cloves, finely chopped
-2-3 pickled jalapeno chilies, chopped (I used regular jar jalapenos that we ALWAYS have!)
-6-8 tbsp chopped, fresh cilantro
-salt and pepper
-lemon and lime wedges, to serve

1. Place fish fillets in bowl and sprinkle with salt and pepper. Squeeze the juice from the limes over the fish.
2. Heat the EVOO in a frying pan. Add garlic and onion and fry for about 2 minutes, stirring frequently until softened. Remove from heat.
3. Add a can of chopped tomatoes to the onion/garlic mixture. ( I used a can of Rotel tomatoes with green chilies)
3. Place 1/3 of the mixture and cilantro in the bottom of a shallow baking dish or roasting pan.
4. Arrange fish on top and top that with remaining onion mixture, jalapenos and cilantro.
5. Bake in a preheated oven at 350 degrees for 15-20 minutes or until fish has become opaque and firm to touch. Serve immediately with lemon and lime wedges for squeezing over the fish.


So easy, healthy and yummy! It really only takes 10 minutes to prepare, if that. Now for some pictures and updates on the Big Baby Bella..... She turns 1 year old this month on the 27th! I can't believe it..she is getting so big and we love her more and more everyday. I realize I sound like I am talking about a child....but she's my dog and I love her so get over it ha! The other day she was playing hide and seek under the blankets and it was hilarious. I wish I would have had the video camera but I didn't have a chance to grab it. I am surprised but glad I at least got a couple pictures.


She also does this thing EVERY SINGLE NIGHT around the time Ande comes home from work. It's weird how she knows he is just around the corner...but she does. She goes to the window and looks out, then goes to the front door and back and forth until he pulls in the drive. She gets so excited for him to come home. It is really sweet. She does this with me too when I am at work and Ande is home with her. It is such a good feeling to walk through the door and having her so happy to see you...wagging her tail in excitement. I saw a bumper stick er on a car the other day that sums up our feeling about Bella. It said "I Love My CRAZY Dog!" HAHA I need one of those =)
